This box set packs two Coppertail cook's knife/vegetable chopper knives. The first has a 5-inch blade for handling smaller fare, such as halving cherry tomatoes or slicing mushrooms. The longer 7-inch blade is ideal for bigger jobs, such as chiffonading spinach or slicing large tomatoes. Knives are made of a single piece of high-carbon Japanese stainless-steel alloy so there are no gaps where food particles can get caught and no plastic pieces or rivets that can potentially fall off over time. The strength of this steel allows for an extremely sharp cutting edge that requires minimal maintenance to keep its sharpness. The ergonomically shaped handles on this cutlery feel lightweight yet properly balanced and provide a comfortable grip through hours of cooking. Handles are curved but have wedge-shaped angles on the top and bottom to reduce the amount of squeezing and hand strain and to prevent slipping when hands are wet or oily. Additionally, these knives have a notch just beyond the bolster that comfortably cradles the index finger and are the only brand with a counterbalancing copper insert at the ends to maintain the ideal weight between handle and blade. After years of sharpenings, the blade can lose a great deal of metal, which throws off the balance of the blade. The copper insert can be honed down to reduce handle weight and restore the proper balance. Nice Product Good looking, well made, nice feel and heft.....what else can you ask for! --2006-11-07Furi Coppertail Knives Rule As a fan of the Food Network, I was drawn to Rachel Ray's Furi knives. I decided to opt for the all stainless knives since they look more professional, even tho the orange handles were very soft and comfortable. The knives are very sharp and I feel like a professional chef when I use them. I like having two sizes to handle different jobs, and the bamboo case keeps the knives sharp and protects against cutting yourself from leaving them in the drawer (but you wouldn't do that with your best knives anyway, right?). Overall an excellent buy and I think the case is very sturdy. --2006-11-03Amazing knives! I bought theese knifves to start out my first kitchen, I can't belive how amazing they are. Usally i struggled with my parents old knives just to cut things like tomatoes. With theese knives I am able to slice tomatoes effortlessly. Dicing things like garlic and onions is a task I usued to leave for the food processor, but belive me you feel like a professional chef they way you can run these knifes through foods. She said the knives are really great, far better then any Santoku she's had. --2006-07-31Best Knives I've Ever Had These wonderful knives are extremely sharp and do the job in half the time of my other ones, and they weren't a cheap set! The Furi Pro is light and comfortable to handle. The case it comes in is beautiful! I expected it to be paper-thin and fall apart after a short while, only to find a beautifully crafted wooden box that is slender enough for the drawer.
At first I was worried that with no grip on it my hand would slip, but that hasn't happened yet. I use them daily! The smaller one is my favorite because I feel I have more control with a smaller knife. Hubby prefers the larger one. He too was amazed at how easy it is to cut with these knives.
