Every summer, Mamma makes her wonderful pesto sauce from bunches of fresh-picked basil. We follow her recipe to the letter, starting with fresh-picked basil leaves (the stems aren't as sweet) and spinach gently puréed in extra virgin olive oil. We then blend in creamy Ricotta cheese, Pignoli nuts, Pecorino Romano and Parmesan cheese, imported from Italy, garlic and seasonings. It's made only in the summer when we can get freshly picked basil.
